    The prickly pear is juicy, sweet and fragrant with a subtle floral aroma. It contains 8 grams of carbohydrates per 100 grams, slightly less than the average metropolitan fruit. These carbohydrates are made from more than 90% glucose (a simple carbohydrate sweetener whose power is not very high (75 against 100 for sucrose, and 130 to 170 for fructose). There is also fructose, and traces of sucrose in the prickly pear. Carbohydrates provide the bulk of the energy supply of the fig; Barbary: 44 calories (182 k Joules).

    Indeed, other energy components are very scarce: the proteins and fats (found mainly in cell membranes) do not exceed 1.3 g and 0.7 g per 100 g. The prickly pear is, as a result, moderate energy occurring at the same level as orange or blueberry. Prickly pear is distinguished by a very high content of fiber, about 4.4 g to 5 g per 100 g (one value among the highest for a fresh fruit). It is overwhelmingly insoluble fiber (cellulose, hemicellulose, lignin), that forms the frame of particularly small seeds present in the pulp. Note that one can easily eliminate most of these fibers by passing the pulp through a fine sieve: the purée can be used to make sauce or sorbet.

    The prickly pear provides vitamin intake both varied and interesting. The rate of vitamin C is 22 mg per 100 g, a value higher than that generally falls in fruit metropolitan. It also contains pro-vitamin A (as beta carotene and crypto-xanthine), at a rate of 45 to 60 mg per 100 g. Finally, the B vitamins are also present, at rates close to those of most fresh fruits (0.02 mg vitamin B1, vitamin B2 0.03 mg, 0.4 mg of vitamin B3 or PP).

    Among the minerals, there is, besides dominant potassium (usually in fresh vegetables), particularly high levels of calcium (46 mg per 100 g) and magnesium (28 mg): they are among the highest for a fruit costs. Phosphorus does not exceed 32 mg, one arrives at a ratio of calcium to phosphorus is substantially above 1, which promotes proper calcium assimilation. One can also note the presence of iron and copper in significant quantities (respectively 1.1 mg and 0.6 mg).
